Delicious dairy-free bircher superfood
- 1 cup of High Protein Superfood
- 2 cans of coconut milk
- 2 plums
- 1 apricot plus any other fruit you want
- 1 cup of sugar
- 1 lime
Bircher muesli is the swiss version of what we would usually call overnight oats. Bircher Muesli was developed towards the end of the 19th century by a Swiss physician Maximilian Bircher-Brenner. He believed eating raw foods had many nutritional benefits for his patients. Soaking the oats in milk overnight made them softer and easier to digest. Since then Bircher muesli has become a breakfast staple in many countries.
We’ve created our own version of Bircher muesli that we like to call Bircher Superfood. Swap out your oats for our High Protein Breakfast Superfood for a breakfast higher in protein, vitamins and minerals. It’s nutrient dense, comprised only of whole foods and is much higher in protein than most traditional breakfast cereals.
Your new favourite dairy-free breakfast
Breakfast can be a tricky meal for those that are dairy-free. Many high-protein breakfast foods include dairy products or lack the ideal nutrients needed for an energetic start to the day. In this recipe we use coconut water and coconut yoghurt as a replacement for dairy products.
The great thing about this Bircher is that it isn’t just for those who can’t handle dairy. It tastes great, is packed with lots of nutrients, and is high in protein. It’s also super easy to make and comes together in less than five minutes.
If you’ve never made your own Bircher before, the oats or superfood need to be placed in the fridge the night before. In twelve hours or less the superfoods will have absorbed most of the coconut water and turn into a creamy Bircher. In the morning mix in your dairy-free yoghurt and garnish with your favourite toppings. We love blueberries and chopped macadamia nuts.
This is a great alternative for people who don’t like the chewiness of muesli and is tastier and faster than making porridge on the stovetop.
Bircher Superfood Recipe Ingredients
½ cup High Protein Superfood any flavour
½ cup coconut water
½ cup of coconut yoghurt (unsweetened or sweetened)
a handful of berries or chopped fresh fruit
5-6 raw macadamias
Bircher Superfood Recipe Instructions
1. Soak your High Protein Superfood in coconut water overnight making sure it is mixed in well.
2. In the morning, the superfood will have absorbed a lot of the coconut water and will have softened. Stir with the coconut yoghurt.
3. The Bircher should have a wet, stogy consistency. If it’s still a little stiff add some more yoghurt or with some more oats or chia seeds if it’s too wet.
4. Add your favourite berries and broken macadamias ontop to serve.
